Chicken Parmesan recipe
I'm not a big fan of Parmesan cheese but this chicken Parmesan recipe is definitely an exception! You MUST try this recipe!
It's very delicious with pasta and that's what I have shown here. To have your fiber (it's healthy), I recommend having some vegetables with it too.

Ingredients (2 servings):
2 boneless chicken breasts
1 clove garlic
2 slices of French bread (or about 1 cup dry bread crumbs)
1/3 – 2/3 jar (700mL) pasta sauce
mozzarella cheese
1/4 - 1/2 cup grated Parmesan cheese
2 tablespoons of parsley
olive oil
dried spaghetti
vegetables (optional)
Method:
Part 1 (10 to 15 min)
Defrost chicken in microwave (1). Fill a large pot to 3/4 full with water (2), set on high heat (3), cover and wait for water to boil (4). In the meantime, put the French bread in the toaster (5). Once toasted (6), cut the toasted and dry French bread into tiny cubes (7). Using a bowl, crush the dry bread cubes into bread crumbs (8). Bunch a diameter of a quarter coin of dried spaghetti (9) and set it aside until the water in the pot boils.
Part 2 (10 min)
Once the water is boiling, open the lid (1). Put the sphagetti in the boiling pot and use tongs to press on them so they are submerged (2). Sprinkle salt for 5 seconds (3). Cook for 7 min (check the instructions on your dried spaghetti package). Once the spaghetti is cooked, use tongs (4) to transfer the spaghetti to a bowl (5) and shock them in cold water to stop the cooking process (6). You can discard the spaghetti water in the sink at this point.
Part 3 (40 min)
Preheat oven to 350°F (1). Dice the garlic (2) and sprinkle it in the bowl with the bread crumbs. Slice the chicken breast down the middle so they are about half inch in thickness (3). Coat the chicken with bread crumbs (4). Spread a thin layer of olive oil in a baking dish and set chicken in it (5). Grate/slice the mozzarella cheese and cover each chicken breast (6). Pour pasta sauce over the baking dish (7). Sprinkle with Parmesan cheese and parsley (8). Bake for 30 minutes (9).
Serve with spaghetti, some vegetables, and some salt and pepper. You can also add additional pasta sauce on your spaghetti. I love chicken Parmesan recipe and I hope you do too!
