Diet cabbage soup recipe
This is the original basic diet cabbage soup recipe. This recipe is quick and simple to prepare.
This recipe is part of an old 7 day weight loss program that allows people to lose 10 pounds in 7 days while eating mainly cabbage soup. If you're curious, you can read more about the Cabbage Soup Diet (opens a new window). You shouldn't eat just the diet cabbage soup forever because you won't get enough nutrients in the long run.
If you're not interested in the diet cabbage soup, simply replace half of the water with chicken or vegetable broth and add in some cooked chicken to make just a regular cabbage soup!
This soup is good for cooler weather. I started making this soup on a sunny day and by the time the soup finished simmering, it rained became very dark. I had to use an extra lamp to take a picture of the final product! I hope you enjoy it.

Ingredients (2 to 3 servings):
8 cups of water
1 green pepper
2 celery stalks
salt and pepper
1/2 teaspoon thyme
brown rice (optional)
Part 1 (60 min)
Add water to a large pot (1) and turn on medium heat. Cut all vegetables (2) and place them in the warm pot with brief stirring (3). Add the thyme. Turn on the high heat (4) and let it boil for 5 minutes with constant stirring (5). Turn down to low heat, cover and let it simmer for 30 to 45 min (6).
Serve with salt and pepper.
