Egg Fried Rice Recipe

The egg fried rice recipe is yet another one that I use often because it's easy, delicious and quick. I originally learnt this from my mom who originally learnt it from my grandfather.

I like making this for breakfast because it's really light for the stomach. This meal is just as good for lunch or dinner too actually.

Total time: 30 min

Ingredients (2 to 3 servings):

1/4 onion
2 cups of uncooked rice
4 eggs
1 tablespoon of salt
1 tablespoon sugar
1/2 tablespoon of pepper
1 teaspoon sesame oil (optional)
olive oil
soy sauce
cucumber (optional)

Method:

Part 1 (10 min)
Measure out the rice (1). Put some water in the pot (2) and wash it by stirring with your hands (3). Decant the wash water (4) and add appropriate amount of water (I usually add 3/4 cup of water for 1 cup of rice, but check your rice cooker manual). Set the rice to cook (5). Chop the onions (6).

Part 2 (20 min)
Once the rice is finished cooking, pour olive oil in a large pot (1) and turn on medium heat. Transfer the rice to the frying pan (2) and crack in the eggs (3). Quickly stir it well for about 5 min (4). Add in the onions, sesame oil (optional), salt, sugar and pepper and stir constantly for about 5 min (6).

Serve with some slices of cucumber and soy sauce.
