Shrimp fried rice recipe
Shrimp fried rice recipe is very easy and quick.
This recipe can be easily adapted. For example, if you want chicken fried rice recipe, simply replace the shrimp with 1 boneless chicken breast.
I use Atlantic cold water shrimps, peeled and deveined, in a frozen package because that's the easiest. You can start from fresh shrimps too but you would have to peel them if you don't like the shells. The smaller shrimps, like the Atlantic cold water shrimps, are more appropriate for this recipe in my opinion.

Ingredients (2 to 3 servings):
Shrimps (Atlantic cold water shrimps), peeled and deveined (340g, 1 bag)
1/4 cup green onion
1/4 cup onion
1 cup of mushrooms
1 - 2 cups bean sprouts
2 carrots
1 clove garlic
2 eggs
4 tablespoons soy sauce
1 teaspoon sesame oil
olive oil
salt and pepper
2 cups of rice
Method:
Part 1 (5 min)
Run the frozen shrimp under warm running water (1). Measure out the rice (2). Put some water in the pot (3) and wash it by stirring with your hands (4). Decant the wash water (5) and add appropriate amount of water (I usually add 3/4 cup of water for 1 cup of rice, but check your rice cooker manual). Set the rice to cook (6).
Part 2 (15 min)
Pour olive oil on a frying pan (or use a pot) (1) and turn on low heat (2). Dump the water in the shrimp bowl (3) and with your hands, transfer the shrimps to the pan/pot. Make sure they are well spread out and let them cook on low heat for about 10 min (4). Meanwhile, break the eggs in a small bowl and beat them with a spoon (5). Chop onion, green onions, mushrooms, carrots; dice the garlic; measure out the bean sprouts (6). Make sure the rice is done cooking before proceeding to part 3.
Part 3 (10 min)
If you’re using a pan, it is best to transfer the shrimp to the pot now to have more room. Add all the vegetables to pot along with the shrimps and cook on medium heat for 5 min (1). Mix in the rice, add 1/4 tablespoon of salt and 1/4 tablespoon of pepper (optional; these values are for 1 serving), then pour in the soy sauce, sesame oil, and the beaten eggs (2). Cook by stirring constantly for 5 min, until the eggs are cooked (3).
Serve with soy sauce, salt and pepper.
