Chicken soup recipe

This chicken soup recipe is easy and perfect in many ways. It's very light, healthy and also perfect for those sick in bed.

You can cook the rice in the rice cooker, which is what I have shown here. Another option is to boil the rice in another pot. The soup is also good without the rice if you don't like rice or don't have it on hand.

The rice makes the soup more filling. I personally love rice, so I like to add it in the higher range (as you can probably see from the picture of the end result at the bottom of the page)

Total time: 45 min

Ingredients (2 servings):

2 boneless chicken breasts
1/2 onion
2 carrots
2 stalks of celery
1/4 lemon or lemon juice
olive oil
1 cup of chicken broth
1 cup of vegetable broth
1 cup of water
1/2 - 1 cup of rice (optional)
1/2 teaspoon of thyme (optional)
2 tablespoons of parsley (optional)
salt and pepper


Part 1 (5 min)
Defrost chicken breasts (1). Measure out the rice (2). Put some water in the pot (3) and wash it by stirring with your hands (4). Decant the wash water (5) and add appropriate amount of water (I usually add 3/4 cup of water for 1 cup of rice, but check your rice cooker manual). Set the rice to cook (6).

Part 2 (25 min)
Pour olive oil in the saucepan (1) and start the stove with low heat (2). The chicken should be done defrosting. Take it out and chop it on the cutting board (3). Add the chicken to the saucepan stir it to spread it around the pot (4). Turn the heat up to medium (5). The chicken should be cooked for 10 min. In the meantime, chop the vegetables (6) and occasionally go back to the saucepan to stir the chicken (4). Set the vegetables in a bowl and your slice(s) of lemon on a small plate (7). Add the vegetables from the bowl to the saucepan (8). Cook and stir them for 5 min (9).

Part 3 (15 min)
Combine the chicken and vegetable broths (1) and warm it up in the microwave (2). The rice should be done cooking so transfer it to a small bowl (3). Add broths (4), water, rice and thyme to the saucepan (5). Mix well by stirring for a few seconds (6). Bring the soup to a boil by setting the stove to high heat (7). Bring down the heat to medium or low, then cover and let it simmer for 10 min (8). Sprinkle parsley and squeeze some lemon juice (9).

Serve with salt and pepper.
