Fried fish recipe
Fried fish recipe is a classic of mine.
I used to make it often when I first started out living on my own because it's quick, easy and delicious. It also doesn't require many ingredients. Fried fish is my favorite dish since I was a little kid and will probably remain my favorite forever. My mom still makes it for me whenever I visit.
There's many kinds of fish you can use: sole, salmon, haddock, to name a few. I used haddock in this fried fish recipe, but it works for any kind of fish really. I use fillet because I don't like picking out the bones. ;-)
I serve it with some lettuce and cucumber on the side. It brings me many fond memories.

Ingredients (2 servings):
Haddock (Frozen fillet (~400g))
1 and 1/2 to 2 cups of uncooked rice
vegetables (for example, lettuce and cucumber)
Part 1 (5 min)
Either defrost fish in the microwave (slow, good for a large batch) or run the fish under some warm water a 3 times and let it sit for a couple of minutes (fast, ideal for two servings) (1). Meanwhile, perform steps 2 to 6. Measure out the rice (2). Put some water in the pot (3) and wash it by stirring with your hands (4). Decant the wash water (5) and add appropriate amount of water (I usually add 3/4 cup of water for 1 cup of rice, but check your rice cooker manual). Set the rice to cook (6).
Part 2 (25 min)
Pour olive oil in the saucepan (1) and turn on medium heat (2). Once the fish finished defrosting, drain the excess water into the sink (3). Place the fish into the frying pan (4) (you may see some white droplets which is just excess water from the fish, keep moving forward). Cook the first side for 5 to 10 min (Note: the fish fillet is very fragile now and easy to break, if you like fish whole, don’t touch it for at least after 10 min). You’ll start to see the liquid bubble and eventually all the excess water will evaporate (5). Keep cooking for another 10 min until the fish is golden (6).
Serve with rice, soy sauce, lettuce and cucumbers.
