Pound Cake Recipe

This pound cake recipe makes for a British style kind of pound cake. There are many variations of pound cake but the name implies you must use a pound of the four essential ingredients in a pound cake. These four ingredients are butter, flour, eggs, and sugar.

The British version of the pound cake has dried fruits but the American pound cake recipe usually does not call for it. This recipe uses dried orange and lime peels.

Using a mixer is usually best. However, if you don't have a mixer, you can manually mix it but it will take a little longer to prepare.

Total time: 2 h

Cake ingredients (two for two 20.3 cm x 9.8 cm x 6.3 cm pans):

3 cups of all purpose flour
3/4 teaspoon salt
1 teaspoon baking powder
1 cup unsalted butter
2 cups sugar
4 eggs
3/4 plain yogurt
1/3 cup orange juice (freshly squeezed or pre-packaged)
1 tablespoon orange peel
1 tablespoon lime peel
long toothpick (optional)


Preparation stage 1 h before starting the pound cake recipe: (1) if you have frozen butter, leave it out at room temperature to soften.

Part 1 (20 min)
Gather up all the ingredients on the list (1). For the orange and lime peel, simply buy a fresh orange and lime and chop/dice the peel until you have about 1 tablespoon. Add the butter in a mixer machine (2) and turn it medium speed on for a few minutes. Then add the sugar (3) and let it mix on medium speed until well blended. You may have to stop and scrape the sides (4) and then turn it back on for everything to blend evenly (5). Add the eggs, one at a time, beating lightly after each addition (6).

Part 2 (30 min)
Combine the flour with the salt and baking powder (1). Mix the flour bowl so everything is evenly distributed (2). Add a small portion of flour mixture (3) and yogurt (4). Turn on the mixer on low speed (5) for 2 min. Add more flour (6) and some orange juice (7). Turn on the mixer on low speed (8) for 2 min. Repeat this until all the flour, yogurt and orange juice has been added. Pre-heat the oven to 350 F (9).

Part 3 (70 min)
Grease some pans (we use two 20.3 cm by 9.8 cm by 6.3 cm pans) (1). If you do not have a spray, just grease with paper towel soaked in oil. Add the orange (2) and lime (3) peels into the blended flour mixture. Mix everything together (4). Pour the cake mixture into the pans (5). Bake at 350 F for about 60 min (6).

To test whether the pound cake was baked enough, insert a long tooth pick in the centre. If the toothpick comes out clean, the cake is ready.

Take out the cake and cool on a rack for 15 minutes. Remove from the dish and serve.
