Shrimp scampi recipe
Shrimp scampi recipe sounds so fancy. It might be fancy but it is also an easy one amongst the shrimp recipes.
Shrimp scampi recipe is usually made with shrimp, garlic, white wine and lemon juice, and at times butter. This recipe uses flour instead which still gives that creamy taste.
I recommend using pre-cooked frozen shrimp because it will take less time to cook. Also, I strongly recommend that you use white wine. Although if you don't want to or don't have it handy, just replace it with water.
It can be served with either pasta or rice. In this recipe, I used rice but feel free to make your favorite pasta to go with it.

Ingredients (2 servings):
Shrimps, peeled and deveined (~450g, 1 bag)
1 clove garlic
2 cups of uncooked rice (or pasta)
1/4 cup white wine (or water)
1/2 cup all purpose flour
1 tablespoon dried oregano
1 teaspoon pepper
Part 1 (5 min)
Run the frozen shrimp under warm running water (1). Measure out the rice (2). Put some water in the pot (3) and wash it by stirring with your hands (4). Decant the wash water (5) and add appropriate amount of water (I usually add 3/4 cup of water for 1 cup of rice, but check your rice cooker manual). Set the rice to cook (6).
Part 2 (25 min)
Pour olive oil in the saucepan (1) and start the stove with low heat (2). Dice the garlic (3). Squeeze some lemon juice into a measuring cup (4). Coat the shrimps with the flour in a bowl (5). Add the flour covered shrimps, garlic, pepper and oregano to the saucepan (6). Cook on medium heat for 10 min (7). Add wine/water and lemon juice to the saucepan (8). Cook for about 3 to 5 min while stirring constantly (9).
Serve with soy sauce. Add some lettuce for the veggies, you need your greens! ;-)
