Vegetable soup recipe
This vegetable soup recipe has many advantages. The ingredients are easy to find and it's very simple to make.
On top of this, this one is good for weight loss. The reason it's good for weight loss is because a diet with lots of vegetables is lower in calorie but yet it makes you feel full. Consult an expert or research it before switching fully to a vegetarian diet because you want to make sure you get your healthy intake of protein.

Ingredients (2 servings):
2 celery stalks
1 green pepper
1/2 cup of broccoli
1/2 red onion
2 cups of can diced tomatoes
2 cups of chicken broth or vegetable broth
salt and pepper
1 cup water
1/2 teaspoon of thyme (optional)
Part 1 (10 min)
Pour olive oil in the saucepan (1), tilt the pan to spread the oil (2), and set it on the stove with low heat (3). With a knife and cutting board (4), chop all vegetables (red onion, carrot, celery, etc) (5). Place chopped vegetables in one bowl (6).

Transfer vegetables from the bowl to the saucepan (1) and turn the heat to medium (2). Cook all vegetables in the saucepan for 10 min (3). While the vegetables are cooking, measure the broth and water (4), then warm them up in the microwave for 1 min each (5). Add broth and water to the saucepan (6). Adding salt and pepper here is optional.
Bring the soup to a boil by setting the stove to high heat (1). Leave it to boil for 1 min (2) and bring down the heat to medium. Cover and let it simmer for 10 min (3). Add the can diced tomatoes and thyme (optional) (4). Mix well (5) and then cover and simmer for 10 min (6).
Serve with salt and pepper.
Large batch: This vegetable soup recipe is easy to scale up. Simply use more vegetables and broth. Don't forget to use a large pot so you can comfortably fit everything in. You can freeze the left overs in containers and eat it throughout the week.
